Creamy Crockpot Potato Soup

If you asked me, “What food could you NOT live without,” without a doubt, hands down, I’d say the almighty potato.

At every family event – I was first in line for the cheesy potatoes, mashed potatoes, potato chips, potato salad… I could keep going y’all.

There’s just something in the beauty and simplicity that is a potato that makes it so wonderful. You can do SO many things with it and when you do it – you can’t go wrong.

I want to go to Idaho JUST to go to the Idaho Potato Museum. That’d make me the happiest potato alive.

Baked potatoes. Mashed potatoes. Potato chips. Potato salad. Potato soup. TWICE baked potatoes. Potatoes au gratin. French fries. Hash browns. Potato pancake. Home fries. Potato skins.

One of my favorites – potato soup. Most restaurants can’t screw it up and if it’s on the menu there’s a 99.9% chance that I’m getting it. I even get it in the Texas summer when I’m sitting on the patio in almost 100 degree weather. I’m that dedicated.

Another thing I love almost as much as I love potatoes is my crock pot! My Texan man makes fun of my love for it but never complains when I cook meals in it. I’m going to share with you my favorite crockpot potato soup recipe!


Creamy Crockpot Potato Soup

30 min to prepare – serves 6-8

1 (32 oz) diced frozen hash browns

1/2 cup white onion

1 (15 oz) can of corn

1 (32 oz) chicken broth

1 (10 oz) can condensed cream of chicken soup

1 (8 oz) cream cheese, softened

1-1/2 cups sharp cheddar cheese plus extra for garnish

3/4 crumbled bacon plus extra for garnish

1/2 reason rosemary

Salt and pepper to taste


  1. Sauté onions until translucent
  2. Combine everything in crock pot, break up cream cheese and mix together
  3. Place lid on crock pot and cook on high for 3 hours – stirring occasionally
  4. Taste and adjust accordingly
  5. Garnish with cheese, bacon + something to dip in the soup! If Chance was in charge, he’d garnish with chives, but fuck chives! This is my potato soup recipe.
